Bliss balls are my new favorites

And apparently everybody is enjoying them after class!
Here are 2 options from the same basic recipe.

This time I digged the recipe from Deliciously Ella's second book, and adapted it to make it vegan (I substituted the honey by maple syrup)
Cinnamon & maple bliss balls
for 15 balls

125 g cashew nuts
1 handful pumpkin seeds
1 tsp chia seeeds
100 g medjool dates (I used regular dates)
3 tsp maple syrup
2 tsp almond butter
4 tsp cinnamon
Put the cashew nuts, pumpkin seeds and chia seeds in a blender, and mix for 30 seconds, until everything is grinded but not too thin.
Add dates, maple syrup, almond butter and cinnamon, and blend for another minute until a sticky dough forms.
Use your hands to roll the mixture into little balls, place in a bowl in the freezer for 1 hour and then store in the fridge.
Ginger & Lime Bliss Balls
for 15 balls

125 g cashew nuts
1 handful pumpkin seeds
1 tsp chia seeeds
200 g medjool dates (I used regular dates)
juice of 1 lime
3 tsp ginger spice (in powder)
Mix everything and proceed as for the first recipe.
